Maccheroni alla chitarra
Maccheroni alla chitarra are a typical dish from Abruzzo. They owe its name to the "chitarra(guitar)", the tool with which they cut the dough to make them.
This tool, important in the Italian food tradition of this region, is made up of a rectangular beech frame, with thin metal wires. Pressing the layers of dough with a rolling pin, you get the maccheroni. There are other particular tools to knead the dough, like the "rentrocelo".
The maccheroni al rentrocelo are from Chieti, especially from the Lanciano area. The rentrocelo is an engraved wooden tool that, when pressed on the dough, forms rectangular stripes. The maccheroni al rentrocelo, thicker than the maccheroni alla chitarra, are another typical dish of the area.
